I love summertime for too many reasons to list. But, if such a list did exist, up there, at the top of said list, would be that summer is s’mores season! And even though summer is looking a little different this year, and the likelihood of a beach bonfire on which to roast epic amounts of marshmallows is very slim, I remain undeterred. S’mores, in every iteration, will be had this summer. And in copious amounts.
I went to the market to pick up some gluten free graham crackers for some s’mores treats, but when looking at the ingredient list, I decided it would be better just to make my own. Namely to avoid the refined sugar and dairy additives in the boxed variety and because, in my opinion, homemade is (almost) always better. Graham crackers are named as such because of the use of graham flour which is a type of wheat flour. So technically, there’s no such thing as a gluten free Graham Cracker. My Healthy Homemade “Graham” Crackers are primarily made with cassava flour and I use brown rice flour, cinnamon, and some maple syrup to give these delightful crackers a delicious graham vibe.
These graham crackers are simple enough to make and so much better than store bought. They are made with just 11 real ingredients (including the salt!), made without refined sugar sweetened with coconut sugar and maple syrup instead, and the perfect way to make your next s’mores even more amazing! Sub the maple for honey to make Honey Grahams! The dough rolls out beautifully and bakes up in just 15 minutes! I used a ruler and pizza cutter to cut out the cracker shapes, but a rectangular cookie cutter would make this process even quicker. Here’s a great option with a few different sizes if you’re feeling like mini(!) s’mores one day. And if you want to level up your s’mores game even more, make your own marshmallows too! Homemade Graham Crackers
These Healthy Homemade Graham Crackers are so easy to make and way better than the store bought kind. Made with only real ingredients and naturally sweetened with maple syrup and coconut sugar.
gluten free, nut free, dairy free, refined sugar free
Ingredients
Dry Ingredients
- 1 cup cassava flour
- 1/4 cup coconut sugar
- 1/4 cup tapioca flour
- 1/4 cup brown rice flour
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp sea salt
Wet Ingredients
- 3 tbsp avocado oil or coconut oil (melted and cooled)
- 3 tbsp non-dairy milk of choice
- 3 tbsp maple syrup
- 1 egg
Instructions
Heat oven to 350 degrees and prepare baking sheet by lining with parchment paper or silpat.
In the bowl of a stand mixer, or in a large bowl if mixing by hand, mix all the dry ingredients together with the paddle attachment.
Next, add the wet ingredients and mix just until a dough forms.
Gather into a ball and place between two large pieces of parchment paper.
Roll out the dough into a large rectangle 1/4 inch thick.
Using a knife or a pizza cutter slice rectangles 2 x 4 inches. A ruler will be helpful in this step or a rectangular cookie cutter. Then with a fork or chop stick score the surface of the cracker with small holes.
Gently transfer the graham crackers from the parchment paper to the prepared baking sheet. If the dough is difficult to handle use a rubber spatula to help move to the baking sheet. If your kitchen is warm it may be helpful to transfer the rolled out dough to the fridge/freezer for a few minutes to help move the dough off the parchment paper in tact.
Gather any unused dough into a ball and roll it out again into a rectangle and repeat previous steps until all dough cut into crackers.
Bake the graham crackers for 13-16 minutes or until golden brown all over and crisp. Remove from oven. Let cool on baking sheet for a few minutes then transfer to wire rack to cool completely.
Store in an airtight container for a few days or in the freezer for longer!
