These healthy cookies have the delicious flavor combination of chocolate and strawberries! Wonderfully soft, chewy, and absolutely delicious. These better-for-you cookies are made with real ingredients and paleo-friendly!
My guy looooves motorcycles. Well anything with an engine really. But right now his biggest obsession is his dirt bike. Almost every Saturday he’s off with the guys in some nearby desert or forest hitting the off-road trails. And of course I find it to be the perfect excuse to treat the boys with some cookies, energy bars, fat balls, or some experimental recipe to try out on them. As soon as their back, before they’ve had a chance to unload their gear even, I’m questioning them about their snacks. If they give me the thumbs up or one of the guys didn’t realize that it’s secretly low carb or actually fairly healthy then I’m one happy girl.
So I created this cookie as an on-the-go snack for one of their excursions. My goal was to make something tasty that wouldn’t get melty or wither out there in the sun. These cookies were seriously just right. They are low carb made with coconut flour and almond flour as their base to avoid the gluten. I used ghee to give them a deliciously light texture and stability in heat that you would not be able to achieve with coconut oil. Although if you’re vegan (and not concerned with these being out in the sun) you can definitely sub the ghee with equal amounts of coconut oil. Sweetened with coconut sugar for more stable energy and to surpass sugar spikes. I pumped it with dried strawberries and a little bit of chocolate chips which is always a winning flavor combination.
Basically these cookies were crazy good, they were soft and light, but oh so satisfying. These are the perfect cookie for parties or just to bake up one lazy Sunday and enjoy for the rest of the week. They are seriously satisfying in the cookie department and the perfect treat without feeling over indulgent.

Strawberry Chocolate Chip Cookies
These cookies have the awesome flavor combination with the dried strawberries and chocolate chips. Are super quick to make and use only one bowl! They are low carb and gluten free and are the perfect treat to satisfy your sweet tooth without feeling over indulgent.
paleo (gluten/grain/dairy free), refined sugar free
Ingredients
- 1/4 cup ghee
- 1/3 cup coconut sugar
- 1 egg pasture raised if possible
- 1 tsp vanilla
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 1/2 cup dried strawberries chopped
- 1/2 cup chocolate chips dairy and soy free
Instructions
Heat oven to 350 F.
In a large bowl, or in a stand mixer, beat together the ghee (or melted and cooled coconut oil if vegan) and coconut sugar.
Once well combined add in the egg (or chia egg if vegan) and the vanilla and mix again.
Mix in the flours and baking soda until all is well incorporated (careful not to overmix)
Next fold in the strawberries and chocolate chips/chunks until just combined.
With a cookie scoop or tablespoon scoop balls onto cookie sheet (lined with parchment paper). Use your hands to form short circular discs with the dough so they will bake up in perfect cookie circles.
Bake for 12-13 minutes or until edges are starting to brown.
Rest on cookie sheet for about 15 minutes than transfer to wire rack to cool completely. Enjoy!
